Nobody tells you this about lattes: the milk is half the drink, and you can ruin it before any machine gets involved. Wrong milk, wrong temperature, wrong idea of what “frothed” even means — I’ve watched all three happen in the space of one drink order.
The flip side is better news. You don’t need a $700 machine to froth milk properly. I’ve made honest microfoam with a French press, and worse things with better excuses. Four years of steaming milk on a commercial machine mostly taught me what the texture is supposed to feel like — once you know the target, the tool matters less than people think.
First: what are you actually trying to make?
Two different foams, constantly confused with each other.
Latte milk — microfoam — has barely-there bubbles and pours like wet paint. Glossy. You’re adding maybe 20–25% volume. This is the stuff latte art is drawn with.
Cappuccino milk is airier and thicker, holds a spoon-trail, half again the volume you started with.
Same milk, same tools. The difference is how much air you let in and when. Air early, then stop and just spin — that’s the whole game, and it stays the whole game no matter which method you’re on.

The milk itself (before any tool)
Cold milk, cold jug. Whole milk is the most forgiving and tastes best. 2% is fine, a bit lighter. Skim makes a lot of foam that’s stiff and dry — technically impressive, sad to drink.
Oat milk froths beautifully if it’s a barista edition; the regular carton collapses in minutes and that’s the formulation’s fault, not yours. Almond is fussier — barista versions mostly work, regular ones like to separate when heated, and honestly even the good ones have days. If a plant milk keeps failing on you, try the barista version of the same brand before blaming your technique. Usually that’s the entire mystery.
Method 1: the steam wand
The full technique, since this is the one I did a few hundred times a week and the one where technique actually decides everything.
Purge the wand first — one-second blast to spit out the condensed water. Tip just under the surface, jug tilted so the milk can spin. For the first few seconds you want the sound of paper slowly tearing. That quiet tss, tss is air going in. This stretching phase ends way earlier than feels natural — for a latte, two or three seconds and you’re done adding air.
Then sink the tip a little deeper and let the milk whirlpool in silence. No new air. The vortex is grinding the bubbles you already made into smaller and smaller ones, and that’s where microfoam actually comes from. Not from more foaming. From polishing.
Stop when the jug is just past comfortable to hold with a flat palm — that’s roughly 55–65°C, which is the range you want. Could you use a thermometer? Sure. Nobody at a bar does; the palm works.
The beginner error I corrected most often: wand buried deep from the start. Milk gets hot, zero texture, person concludes they “can’t do milk.” They can. They skipped the paper-tearing part, that’s all.
End test: swirl the jug. Wet paint with a gloss on top — good. Bubble bath — the air went in too late and too big, drink it anyway and try again tomorrow.

Method 2: French press
The sleeper, and my honest recommendation if you have no machine. Heat milk to hot-but-not-boiling (~60°C, stovetop or microwave), pour into the press about a third full, pump the plunger just under the surface. Fast strokes for ten seconds — that’s your air. Then slower, deeper strokes for twenty more — that’s your polish. Same two beats as the wand, done by hand. Tap the press on the counter, swirl, pour.
This gets genuinely close to microfoam. Close enough for a rough tulip if you pour with intent, which is more than I can say for anything else on this list.

The famous hack. It works — I was skeptical for years, then a hotel room humbled me. Jar no more than half full of cold milk, lid on, shake hard for 30–45 seconds until it roughly doubles. Lid off, microwave 30 seconds so the heat sets the foam.
Ceiling: big bubbles. Spoonable cap, not pourable paint. Cozy latte-ish drink — fine. Latte art — no, and shaking harder won’t change the physics.
Method 4: the $10 handheld whisk
Heat milk first, whisk just under the surface in a deep cup, 20–30 seconds, chase the foam down as it builds. Better than the jar, worse than the press, takes thirty seconds and rinses under a tap. The press makes better milk; this makes milk on a Tuesday when you’re late. Both are valid lives.

Easier than people expect, because cold foam is supposed to be cold. Shake milk in a jar for a minute, or use the whisk. Skim or 2% actually wins here — low fat builds stiffer cold foam, one of the few places skim gets to be the right answer. Spoon over iced coffee. The coffee-shop upcharge is for thirty seconds of agitation; make of that what you will.

If your machine froths for you, technique isn’t your job — the machine does the air math, and it does it the same way every time, which is the entire point of those systems. Your levers are milk choice (everything above still applies, barista oat especially) and cleanliness, because yesterday’s milk residue is the number one reason automatic frothers “get worse over time.” They didn’t get worse. The mistakes that ruin milk
Overheating, first and worst. Past ~70°C the milk sugars break down and the sweetness dies — scalded milk tastes flat under any amount of pretty foam. Jug too hot to touch = too far, no appeal process.
Adding air late. All the stretching happens at the start; bubbles added to hot milk stay big and soapy forever.
Re-frothing used milk. The proteins are spent. It foams worse, tastes worse, and yes, pouring it out feels wasteful — do it anyway.

Is it better to froth cold or hot milk?
Start cold, always — cold milk holds air better and buys you time before it overheats. Cold foam just takes this to its logical conclusion and skips the heat entirely.
Can I froth milk with nothing at all?
A whisk over a warm saucepan gets you loose foam — hot-chocolate energy, thin for a latte. A sealed jar is the real zero-equipment floor, and it’s more decent than it has any right to be.
Why won’t my oat milk froth?
Check the carton. If it doesn’t say barista, that’s the answer — the barista formulations add fat and protein specifically so the foam holds. Same brand, different carton, completely different behavior in the jug.
