No Crema on Espresso? Every Reason I’ve Seen (and What Fixed It)

No crema on espresso is the one problem you can diagnose before the cup even reaches your mouth. That golden layer isn’t decoration — it’s a free gauge that comes with every machine, and when it goes missing, it’s pointing at your beans, your grind, or the machine itself. Usually in that order. Not always, but usually, and the exceptions are cheaper to rule out than you’d think.

Behind the bar, crema was the first thing I checked on every shot. Faster than tasting, and it rarely lied to me. Here’s how to read yours.


What crema actually is (thirty seconds, no chemistry lecture)

When hot water hits coffee under pressure, it releases the CO2 that’s been trapped in the beans since roasting and whips the coffee’s oils into a foam. That’s the whole trick. There’s a lot of mystique attached to crema — the mark of the master barista, the soul of the shot, pick your favorite — and none of it survives contact with the actual mechanism, which is gas plus oils plus pressure.

The useful part: you need all three at once. Beans that still have gas in them. A grind tight enough for pressure to build. A machine that actually delivers that pressure. Take away any one and there’s simply nothing for the foam to be made of.

So instead of chasing “how do I get more crema,” ask which ingredient went missing. Start with the beans. It’s almost always the beans.


Cause one: your beans have gone flat

The boring answer, and the right one more often than everything else combined. CO2 leaves roasted coffee steadily from the day it’s roasted, and once it’s gone, no technique on earth foams what isn’t there.

I watched this play out every week at the café without ever planning to study it. Tuesdays were delivery days. The first bags of the fresh batch pulled shots with thick, tiger-striped crema that took a minute to settle — the kind people photograph. A week later, scraping the ends of an opened bag, same machine, same hands, and the shots came out with a thin pale ring on top. Nothing else had changed. For a while I assumed I was doing something differently on those days. I wasn’t. It was the bags.

So: check the roast date. Not the “best before” — the roast date, and if the bag doesn’t print one, that already tells you something about the bag. Crema peaks somewhere between one and four weeks after roasting. Past two months in an opened bag it fades no matter what you do. Pre-ground goes even faster, since grinding multiplies the surface the gas escapes from; a three-week-old open bag of pre-ground is, for crema purposes, done.

The fix costs almost nothing to try. Buy a small bag roasted within the last month, pull the same shot, compare. Nine times out of ten the investigation ends right there. The tenth time — keep reading, but honestly, check that roast date twice first. I’ve seen a man descale a perfectly clean machine over a stale bag of supermarket beans, and he was not happy about the afternoon he spent doing it.


Cause two: the grind is too coarse (the watery giveaway)

If your shot has no crema and looks thin and watery — running fast, pale, done in fifteen seconds — that’s not two problems. It’s one. Coarse grounds don’t resist the water, pressure never builds, and without pressure there’s no emulsion. Fast, underwhelming coffee with nothing on top.

Go one step finer and pull again. The shot should slow down, darken, and start showing a layer. If one step isn’t enough, keep going, one at a time. And if the taste has also gone sharp and lemony, you’re under-extracting across the board — the sour side of the sour vs bitter test will confirm it.

Dose matters too, where you control it. Too little coffee in the basket does the same thing as a coarse grind: the water needs something to push against, and it doesn’t have it.

If the whole cup feels thin — not just the top — weak and watery espresso has its own checklist, and the fix depends on which of the two you’ve got.


Cause three: the machine

I put the machine last on purpose. People jump here first — it’s the expensive thing, so it must be the culprit — but hardware turns out guilty maybe one time in ten. When it is, it’s one of these:

Pressure. Espresso wants roughly 9 bars at the coffee. A worn pump or a leaking group gasket and it may never get there. On older machines a gasket that’s gone hard and flat is a cheap, common, slightly annoying fix.

Temperature. Water that’s too cool extracts less of everything, oils included. The classic case is the first shot of the morning on a cold machine — run a blank shot through first to warm the path. Commercial machines idle hot all day, which is a luxury nobody appreciates until they don’t have it.

Cleanliness. Old coffee oils and scale change how water moves through the machine. If your crema faded gradually over months rather than vanishing overnight — and your beans are fresh — the machine is overdue for a clean. If you have a DeLonghi or another superautomatic: read this before you worry

Half the “no crema” panic I run into comes from superautomatic owners comparing their cup to café shots. That comparison isn’t fair to the machine, and nobody tells people this at the point of purchase.

My daily driver is a DeLonghi Magnifica, and its crema is honestly thinner than what I pulled on the commercial La Marzocco. It’s supposed to be. Superautomatics grind a touch coarser by design, dose smaller, and brew through a compact unit rather than a naked portafilter. The physics hands you a lighter layer, full stop. A Magnifica producing a fine, even ring that holds for a minute is a machine doing exactly what it was built to do.

Zero crema is a different story — pale, flat coffee with nothing on top isn’t normal on any machine. Then it’s the same checklist. Fresh beans first; on my Magnifica, switching from a supermarket bag to a fresh local roast changed the crema more than any setting ever has, and I did try the settings. Grinder one notch finer. Then a cleaning cycle.

When thin crema is normal (and not your fault)

Some coffee just doesn’t foam much, and no checklist changes that.

Light roasts. Less developed oils, faster CO2 loss. If you drink bright Ethiopians, judge the cup by taste and let the foam be whatever it is.

Decaf. The decaffeination process strips some of what stabilizes the foam. Decaf crema exists, it just gives up sooner. Normal.

100% arabica. Robusta makes noticeably more crema — partly why traditional Italian blends include some. But a pure arabica shot with modest foam and great taste beats a robusta-heavy shot with an impressive head and burnt rubber underneath. Every time. Which is a hill I’m prepared to die on, and also the subject of the first question below.

FAQ

Does more crema mean better espresso?

No. This is the myth that sells robusta. Crema tells you the shot was made right — fresh gas, real pressure — and says nothing about whether the coffee itself is any good. I’ve had gorgeous crema on shots I wouldn’t serve to anyone I liked.

Why is my espresso watery with no crema?

One problem wearing two symptoms. The grind is too coarse and water is walking through without resistance. One step finer at a time until the shot takes roughly 25–30 seconds.

Is espresso without crema drinkable?

Sure. I’ve drunk plenty. Flatter than the same coffee pulled right, but nobody’s ever been harmed by an ugly espresso.

Does no crema mean my machine is broken?

Rarely. Work through beans, then grind, and only then the hardware. If fresh beans and a finer grind change nothing at all — look at pressure and cleanliness before you think about repairs, because “broken” is the least likely and most expensive conclusion on the list.
